Khalua&lt;br /&gt;1 Tblsp. vanilla extract&lt;br /&gt;&lt;br /&gt;Topping:&lt;br /&gt;Unsweetened cocoa powder for dusting&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Heat cream, milk, half the sugar, and coffee until lightly bubbling. &amp;nbsp;Beat the remaining sugar and yolks in a separate bowl. &amp;nbsp;Mix the two slowly to prevent curdling. &amp;nbsp;Combine by hipping constantly for 3-5 minutes over low heat. &amp;nbsp;Take pan off of heat to let cool.&lt;br /&gt;&lt;br /&gt;While cooling, in a separate bowl large enough for the entire recipe, beat the egg whites to stiff peaks. &amp;nbsp;Fold in remaining mousse ingredients. &amp;nbsp;When custard is no longer steaming hot, fold the two mixtures together. &amp;nbsp;Cool in&amp;nbsp;refrigerator&amp;nbsp;for 4-24 hours and then prepare in ice cream maker according to directions.&lt;br /&gt;&lt;br /&gt;Serve and top with unsweetened cocoa powder.&lt;br /&gt;&lt;br /&gt;*We found that if you make this mixture in the evening and put in the fridge overnight, THEN mix it in the ice cream maker the next morning and stick the ice cream in the freezer for the rest of the day to harden, that the consistency is a lot better when frozen than fresh out of the ice cream maker (when it's more "melty"). &amp;nbsp;So, we'll make the initial mixture, stick it in the fridge overnight, use the ice cream maker in the morning and put the ice cream in the freezer and then after dinner enjoy your delicious dessert!&lt;br /&gt;&lt;br /&gt;&lt;div class="MsoNormal" style="line-height: 16.0pt; and just adjusted it to be gluten free. &amp;nbsp;Basically all you need to do is buy a gluten-free pancake mix and any store and make the mix according to the package. &amp;nbsp;The rest of the recipe is already gluten free. &amp;nbsp;You can make it with or without the "frosting". &amp;nbsp;I've had them both ways and they are equally good. &amp;nbsp;Enjoy!!&lt;br /&gt;&lt;table align="center" cellpadding="0" cellspacing="0" class="tr-caption-container" style="margin-left: auto; margin-right: auto;"&gt;&lt;img border="0" height="262" src="http://2.bp.blogspot.com/-ICFPBOTGxsU/Tjis044OO0I/AAAAAAAAOIk/hd2QQNGpUPI/s400/cinnamon+roll.jpg" width="400" /&gt;&lt;/a&gt;&lt;/td&gt;&lt;/tr&gt;&lt;tr&gt;&lt;td class="tr-caption" style="text-align: center;"&gt;No frosting on this one!!!&lt;/td&gt;&lt;/tr&gt;&lt;/tbody&gt;&lt;/table&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;- 1 package of gluten free pancake mix &lt;b&gt;(Gluten-free Bisquick, Gluten-free King Arthur, Gluten-free Bob's Red Mill, etc)&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;&lt;b&gt;CINNAMON SWIRL&lt;/b&gt;&lt;br /&gt;-1/2 cup butter, melted&lt;br /&gt;-3/4 cup brown sugar, packed&lt;br /&gt;-1 Tblsp. cinnamon&lt;br /&gt;&lt;br /&gt;&lt;b&gt;CREAM CHEESE "FROSTING"&lt;/b&gt;&lt;br /&gt;-2 oz. cream cheese&lt;br /&gt;-4 Tblsp. butter&lt;br /&gt;-3/4 cup powdered sugar&lt;br /&gt;-1/2 tsp. vanilla extract&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Prepare pancake mix according to the package.&lt;br /&gt;Mix the butter, brown sugar, and cinnamon and then scoop into a ziplock bag. &amp;nbsp;&lt;i&gt;You want the mixture to be a sort of thick consistency and not runny or else it will just fill your whole pan with cinnamon mixture.&lt;/i&gt;&lt;br /&gt;In a microwave safe bowl, melt the butter and cream cheese. &amp;nbsp;Then mix in the sugar and vanilla extract (&lt;i&gt;I use my electric stand mixer and it gets the lumps out&lt;/i&gt;).&lt;br /&gt;&lt;br /&gt;Heat pan on a medium-low heat and spray with non-stick spray. &amp;nbsp;Put the desired amount of batter in the pan or skillet and then take the CINNAMON SWIRL MIXTURE and snip a corner off the bag so you can squeeze a swirl onto each pancake. &amp;nbsp; &amp;nbsp;As with cooking regular pancakes, wait until you begin to see bubbles before you flip to other side. &amp;nbsp;You want that second side to get brown, so maybe 1-2 minutes depending on your stovetop.&lt;br /&gt;&lt;br /&gt;When they are on the plate, drizzle the CREAM CHEESE "FROSTING" on top.&lt;br /&gt;&lt;br /&gt;To see all these steps in &lt;i&gt;really&lt;/i&gt; text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;The type of flour you'll need for this is tapioca flour (or tapioca starch). &amp;nbsp;I've seen it in every grocery store I go to or for SURE in a natural foods store like Whole Foods, etc. &amp;nbsp;In the regular grocery store I usually see it in the baking section with other flours made by Bob's Red Mill. &amp;nbsp;It looks like this:&lt;/div&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;-1/2 cup milk&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;-1/4 cup canola oil&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;-1 cup tapioca flour&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;-1/2 tsp. salt&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;-1/4 cup grated cheddar cheese&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;-1/4 cup grated parmesan cheese&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;i&gt;(add more cheese if you want to sprinkle more on top of each roll before baking!! &amp;nbsp;I did this...maybe OVERdid this and they turned out delectable.)&lt;/i&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;i&gt;&lt;br /&gt;&lt;/i&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Directions:&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Preheat oven to 400 degrees. &amp;nbsp;Put egg, milk, oil, flour, and salt in blender and blend until smooth. &amp;nbsp;Add cheeses and pulse about 2 times just to get the cheese into smaller grated pieces. &amp;nbsp;Pour into greased mini muffin tin right away and fill each tin about 3/4 of the way full &lt;i&gt;(I used a mini-cheesecake pan the first time I made these and they were bigger and fluffier, so either one will work)&lt;/i&gt;.&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; Heat cream cheese in the microwave for about 20-30 seconds so it is soft and easy to stir. &amp;nbsp;Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic and stir until combined. &amp;nbsp;Then add cilantro, green onions, chicken, and cheese and combine well.&lt;br /&gt;3. It's almost naturally gluten free.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1/2 C brown sugar&lt;br /&gt;1/2 C olive oil&lt;br /&gt;1/2 C soy sauce (&lt;b&gt;LA CHOY, SAN-J WHEAT FREE SOY SAUCE, BRAGG'S AMINO&lt;/b&gt; are gluten free)&lt;br /&gt;1 C pineapple juice&lt;br /&gt;1 T freshly grated ginger&lt;br /&gt;4-5 garlic cloves, finely minced&lt;br /&gt;&lt;br /&gt;up to 2 lbs flank steak&lt;br /&gt;&lt;br /&gt;Combine first 6 ingredients for the marinade and mix well. Reserve about 1/4 cup and set aside.&lt;br /&gt;&lt;br /&gt;Score flank steak with a knife diagonally on both sides (about 1/8 inch deep)&lt;br /&gt;&lt;br /&gt;Put the steak in large ziploc bag and pour marinade over it. Refrigerate 8 hours or overnight. Take out of fridge 30 minutes before grilling. Place steak on grill and cook for 5-10 minutes per side, depending on the size. Use the 1/4 C marinade you set aside to brush over steak in the last few minutes of grilling. Flank steak should still be pink in the middle when done. &lt;br /&gt;&lt;br /&gt;Remove from grill and let stand for 5 minutes before cutting so the juices can redistribute. There are some other tasty looking recipes there so you might see more.&lt;br /&gt;&lt;br /&gt;I used chicken breasts &lt;br /&gt;&lt;br /&gt;2 tsp vegetable oil&lt;br /&gt;&lt;br /&gt;Rub:&lt;br /&gt;2 tsp granulated garlic&lt;br /&gt;2 tsp chili powder&lt;br /&gt;1/2 tsp onion powder&lt;br /&gt;1/2 tsp coriander&lt;br /&gt;1 tsp kosher salt&lt;br /&gt;1 tsp cumin&lt;br /&gt;1/2 tsp chipotle chili powder (I just used regular old chile powder above and omitted this because I didn't have any!)&lt;br /&gt;&lt;br /&gt;Glaze:&lt;br /&gt;1/2 Cup Honey&lt;br /&gt;1 Tblsp Cider Vinegar (&lt;span style="font-weight:bold;"&gt;BRAGG'S, HEINZ&lt;/span&gt; are gluten free)&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Combine the rub spices in bowl and mix well. Trim off any excess fat from the chicken pieces. Drizzle oil over chicken and rub it in to coat all the pieces. Rub spice mixture on each piece of chicken to thoroughly coat.  Grill chicken for 3-5 minutes on each side, until cooked through.&lt;br /&gt;&lt;br /&gt;While chicken is cooking, warm honey in the microwave so it's not so thick. Add the vinegar and combine well. Reserve 2T honey glaze for later. Heat oven to 400° F. Heat 1 tablespoon of the oil in a large ovenproof skillet over medium-high heat. It's really good and naturally gluten free.  It requires you to marinate for 12 hours, though.  It says overnight but I just threw it together in the morning and by the evening it was ready.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;    * 4 pieces Boneless, Skinless Chicken Breasts&lt;br /&gt;    * 5 cloves Garlic, Minced&lt;br /&gt;    * 1 teaspoon Salt&lt;br /&gt;    * 1/2 teaspoon Black Pepper&lt;br /&gt;    * 1/2 teaspoon Cayenne Pepper&lt;br /&gt;    * 1/2 teaspoon Ground Coriander&lt;br /&gt;    * 1/4 teaspoon Cumin&lt;br /&gt;    * 1/4 teaspoon Cardamom&lt;br /&gt;    * 1 whole Lime, Juiced&lt;br /&gt;    * 1 whole Onion, Diced&lt;br /&gt;    * ¼ cups Butter&lt;br /&gt;    * 1 can (14.5 Oz. Can) Tomato Sauce&lt;br /&gt;    * 1 can (14.5 Oz. Can) Petite Diced Tomatoes&lt;br /&gt;    * 1 pint Whipping Cream&lt;br /&gt;    * 1 bunch Chopped Cilantro, to taste&lt;br /&gt;    * 2 cups Basmati Rice (or However Much You Want)&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;Combine first 9 ingredients and marinate overnight.&lt;br /&gt;&lt;br /&gt;Saute the onion in the butter until soft. Begin by measuring the spices: chopped garlic, oregano, cumin, cayenne, and chili powder.&lt;br /&gt;2. Place the ground beef in a large pot and throw in the garlic&lt;br /&gt;3. Cook the beef until brown.&lt;br /&gt;4. Drain the fat.&lt;br /&gt;5. Pour in the tomato sauce&lt;br /&gt;6. Followed by the spices and the salt&lt;br /&gt;7. Stir together well, cover, and reduce the heat to low. COver the pot and simmer for 1 hour, stirring occasionally.  If the mixture becomes overly dry, add in 1/2 cup water at a time as needed.&lt;br /&gt;8. After an hour, place the masa in a small bowl. Add 1/2 cup water and stir together with a fork.&lt;br /&gt;9. Dump the masa mixture into the chili.&lt;br /&gt;10. Stir together well.  Taste, adjust the seasonings, and add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor.  Add the beans, jalepeno, and tomatoes if desired. Add the peas and carrots and mix well.  Transfer to 4 individual baking dishes (or one pie pan) and top with mashed potatoes. Pour the cream in a pot.  Thinly slice the potatoes.  Place them in the pot.  Add chopped garlic, salt, pepper, and a pinch of nutmeg.  The potatoes should be totally covered by not "swimming" in the cream. Bring to a boil on medium heat.  Stir occasionally to make sure that the potatoes do not stick to the bottom of the pot.&lt;br /&gt;&lt;br /&gt;Arrange the potatoes evenly in a generously buttered dish.  The bottom of the dish can be rubbed with garlic.  Cover completely with grated cheese.  Place the gratin on a baking tray just in case the cream boils over.  Cook in the oven at 425 degrees F for about 30 min.  Then reduce heat to 350 degrees F for 15-20 minutes. I also make it with bok choy sometimes and it is just as good!&lt;br /&gt;&lt;br /&gt;SERVES 4 AS PART OF MULTICOURSE MEAL&lt;br /&gt;1 lb (500 g) top sirloin or flank steak, thinly sliced into 1/8-in (3-mm)-thick strips&lt;br /&gt;11/2 lbs (750 g) broccoli, cut into bite-size florets&lt;br /&gt;1 tablespoon high-heat cooking oil&lt;br /&gt;1 tablespoon minced garlic&lt;br /&gt;&lt;br /&gt;BEEF MARINADE&lt;br /&gt;1 1/2 teaspoons soy sauce (&lt;span style="font-weight:bold;"&gt;SAN-J&lt;/span&gt; Wheat Free Tamari, &lt;span style="font-weight:bold;"&gt;LA CHOY&lt;/span&gt;, and &lt;span style="font-weight:bold;"&gt;BRAGG'S&lt;/span&gt; Aminos are gluten free)&lt;br /&gt;1 teaspoon cornstarch&lt;br /&gt;1/2 teaspoon cooking oil&lt;br /&gt;Freshly ground black pepper to season the beef&lt;br /&gt;&lt;br /&gt;STIR-FRY SAUCE&lt;br /&gt;3 tablespoons soy sauce (SEE ABOVE FOR GLUTEN FREE OPTIONS)&lt;br /&gt;2 teaspoons Chinese rice wine (or dry sherry)&lt;br /&gt;2 teaspoons Chinese black vinegar (or balsamic vinegar)&lt;br /&gt;&lt;br /&gt;1 In a bowl, combine the ingredients for the Beef Marinade. Add the beef and let marinate for 10 minutes at room temperature.&lt;br /&gt;&lt;br /&gt;2 In a small bowl, mix together the ingredients for the Stir-fry Sauce.&lt;br /&gt;&lt;br /&gt;3 In a wok or large sauté pan, add 1 inch (2.5 cm) of water and bring to a boil. Add the broccoli and cover to steam for 3 minutes. The broccoli should be bright green, crisp tender and you should be able to pierce the stem with a fork. Drain.&lt;br /&gt;&lt;br /&gt;4 Discard the water in the pan and dry the pan well. Set the pan over high heat and when hot, add the high-heat cooking oil and swirl to coat. Add the garlic and fry for 15 to 30 seconds, until fragrant. Add the steak strips, keeping them in one layer and fry 30 seconds. Flip the strips and fry the other side.&lt;br /&gt;&lt;br /&gt;5 Pour in the Stir-fry Sauce and stir to combine. Simmer until the sauce is thick enough to coat the back of a spoon, about 30 seconds. Next time I make it I'll post a picture here.&lt;br /&gt;&lt;br /&gt;4 chicken breasts&lt;br /&gt;&lt;br /&gt;1 cup shredded cheddar/Monterey jack cheese blend&lt;br /&gt;&lt;br /&gt;2 cups crumbled corn chips or fried corn tortilla strips&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Marinade:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 cup water&lt;br /&gt;&lt;br /&gt;1/3 cup soy sauce (&lt;span style="font-weight:bold;"&gt;SAN-J&lt;/span&gt; Wheat Free Tamari, &lt;span style="font-weight:bold;"&gt;LA CHOY&lt;/span&gt;, and &lt;span style="font-weight:bold;"&gt;BRAGG'S&lt;/span&gt; Aminos are gluten free)&lt;br /&gt;&lt;br /&gt;2 Tblsp. lime juice&lt;br /&gt;&lt;br /&gt;2 tsp. minced garlic&lt;br /&gt;&lt;br /&gt;1/2 tsp. salt&lt;br /&gt;&lt;br /&gt;1/4 tsp. ground ginger&lt;br /&gt;&lt;br /&gt;1/4 cup tequila&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Mexi-Ranch dressing:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1/4 cup mayonnaise (&lt;span style="font-weight:bold;"&gt;BEST FOODS, HELLMAN'S, KROGER, SAFEWAY&lt;/span&gt; are gluten free)&lt;br /&gt;&lt;br /&gt;1/4 cup sour cream (&lt;span style="font-weight:bold;"&gt;KNUDSEN, DAISY, HORIZON ORGANIC&lt;/span&gt; are gluten free)&lt;br /&gt;&lt;br /&gt;1 tblsp. milk&lt;br /&gt;&lt;br /&gt;2 tsp. minced tomato&lt;br /&gt;&lt;br /&gt;1 1/2 tsp. white vinegar (&lt;span style="font-weight:bold;"&gt;HEINZ&lt;/span&gt; is gluten free)&lt;br /&gt;&lt;br /&gt;1 tsp. minced onion&lt;br /&gt;&lt;br /&gt;1/4 tsp. dried parsley&lt;br /&gt;&lt;br /&gt;1/4 tsp. Tabasco sauce&lt;br /&gt;&lt;br /&gt;1/8 tsp. salt&lt;br /&gt;&lt;br /&gt;1/8 tsp. paprika&lt;br /&gt;&lt;br /&gt;1/8 tsp. dried dill weed&lt;br /&gt;&lt;br /&gt;1/8 tsp. cayenne pepper&lt;br /&gt;&lt;br /&gt;1/8 tsp. cumin&lt;br /&gt;&lt;br /&gt;1/8 tsp. chili powder&lt;br /&gt;&lt;br /&gt;Prepare marinade and pour in ziplock bag to marinate the chicken in. Add chicken and chill for 2 to 3 hours (no more than 3).&lt;br /&gt;&lt;br /&gt;Make the Mexi-Ranch dressing by combining all ingredients. Mix well until smooth and chill it until needed. &lt;br /&gt;&lt;br /&gt;Grill the chicken after it has marinated.  After chicken is done, put cooked chicken in baking pan. Spread a layer of Mexi-Ranch dressing over each piece of chicken, followed by 1/4 cup cheese on each piece. Broil chicken for 2 to 3 minutes, or until cheese has melted. However, SOME grocery stores have gluten-free sections and may carry it so make sure to check when you're doing your regular shopping!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;-1 lb. Italian sausage, casings removed or ground beef&lt;br /&gt;-1 pint ricotta cheese&lt;br /&gt;-1 egg, lightly beaten&lt;br /&gt;-1/2 tsp dried basil&lt;br /&gt;-1/2 tsp. dried thyme&lt;br /&gt;-1/2 tsp. dried oregeno&lt;br /&gt;-1/2 tsp. garlic powder&lt;br /&gt;-1 cup shredded mozzarella cheese, divided&lt;br /&gt;-12 gluten free lasagna noodles (&lt;span style="font-weight: bold;"&gt;TINKYADA&lt;/span&gt; or &lt;span style="font-weight: bold;"&gt;DEBOLES&lt;/span&gt; makes gluten free rice lasagna noodles; you can find these in the pasta section of your health food store [Whole Foods, etc])&lt;br /&gt;-3/4 c. grated Parmesan cheese&lt;span style="font-size:100%;"&gt;&lt;span style="color:black;"&gt;&lt;br /&gt;-1 jar pasta sauce (&lt;span style="font-weight: bold;"&gt;PREGO, RAGU, BERTOLI,&lt;/span&gt; and &lt;span style="font-weight: bold;"&gt;BARILLA&lt;/span&gt; are gluten free)&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;Cook lasagna noodles according to package (about 2 minutes less since you'll be baking them too)&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/span&gt;    &lt;p class="MsoNormal"  style="font-family:georgia;"&gt;&lt;span style="font-size:100%;"&gt;&lt;span style="color:black;"&gt;&lt;o:p&gt; &lt;/o:p&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;Preheat oven to 350 degrees. Cook meat and drain.&lt;br /&gt;&lt;br /&gt;In a small bowl, combine ricotta, egg, basil, thyme, garlic powder, oregano, and half the shredded mozzarella. Mix well, and set aside.&lt;br /&gt;&lt;br /&gt;Coat the bottom of a 9x13 baking dish with a little of the spaghetti sauce. Place three noodles in the bottom of the pan. Spread a layer of the ricotta mixture, a layer of meat, and a layer of spaghetti sauce over noodles.  Repeat two more times. Top with the reserved mozzarella and Parmesan.  Cover with foil. Make sure they are &lt;span style="font-weight: bold;"&gt;RICE&lt;/span&gt; paper rolls...they can contain tapioca starch which is fine)&lt;br /&gt;-1 cup shredded veggies (carrots, broccoli, or cabbage)&lt;br /&gt;-1 can water chestnuts, drained&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;After you've made the sauce and set it aside, add a few tablespoons of oil to the same pan and cook up the chicken pieces in it.  Once cooked, throw them in a food processor with the water chestnuts and grind to fine pieces.&lt;br /&gt;&lt;br /&gt;After soaking each rice paper roll, lay flat on a plate and put some of the shredded veggies and the chicken in the middle of the roll.  Carefully roll one side over, then both ends in, then roll the rest of the way shut. You can adjust the spice a bit when you make the jerk "sauce".&lt;br /&gt;Serves 4.&lt;br /&gt;&lt;br /&gt;1 cup white rice&lt;br /&gt;1/4 cup cider vinegar (&lt;span style="font-weight:bold;"&gt;BRAGG'S&lt;/span&gt; and &lt;span style="font-weight:bold;"&gt;HEINZ&lt;/span&gt; REAL apple cider vinegar are gluten free)&lt;br /&gt;1/4 cup orange juice&lt;br /&gt;2 tblsp. jerk sauce ** (recipe below)&lt;br /&gt;1 tblsp. grated fresh ginger&lt;br /&gt;4 6oz. boneless, skinless chicken breasts&lt;br /&gt;salt and pepper&lt;br /&gt;1 tblsp. olive oil&lt;br /&gt;1 15 oz. can black beans, drained and rinsed&lt;br /&gt;8 oz. fresh pineapple cut into 1 inch pieces (I used canned)&lt;br /&gt;1 bunch scallions, sliced&lt;br /&gt;&lt;br /&gt;**Here is the jerk seasoning recipe I used:&lt;br /&gt;Mix all these ingredients together:&lt;br /&gt;* 2 tablespoons dried minced onion&lt;br /&gt;* 2 1/2 teaspoons dried thyme&lt;br /&gt;* 2 teaspoons ground allspice&lt;br /&gt;* 2 teaspoons ground black pepper&lt;br /&gt;* 1/2 teaspoon ground cinnamon&lt;br /&gt;* 1/2 teaspoon cayenne pepper&lt;br /&gt;* 1/2 teaspoon salt&lt;br /&gt;* 2 tablespoons vegetable oil&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cook the rice according to the package directions.&lt;br /&gt;&lt;br /&gt;Combine the vinegar, orange juice, jerk sauce, and ginger in a measuring cup or small bowl; set aside.&lt;br /&gt;&lt;br /&gt;Pound the chicken to an even thickness. Season it with 1/2 tsp. salt and 1/4 tsp. pepper.&lt;br /&gt;&lt;br /&gt;Heat the oil in a skillet over medium heat. Add the chicken and cook until browned, about 4 minutes per side. Remove from heat and add the vinegar mixture. Then lay corn tortillas in one layer across the bottom of the dish (you may have to break the tortillas in half and quarters to make it all fit). Next spoon some more of the enchilada sauce over the corn tortillas so they are completely covered (no dry spots).  Pour chicken mixture over top and spread out in an even layer.  Add a layer of cheese.  Put another layer of corn tortillas on top of this.  Spoon some more enchilada sauce and spread so that the tortillas are completely covered.  Add a layer of cheese.  Add one more layer of tortillas and cover again with plenty of enchilada sauce. Preheat oven to 450 degrees F.&lt;br /&gt;&lt;br /&gt;2. Melt butter in microwave. Add garlic to it and let cool slightly. Crumble potato chips in food processor by pulsing for 30 seconds, or place paper towel over chips and roll back and forth with a rolling pin until chips resemble crumbs. Mix in black pepper. I've seen these mixes in a few of my local grocery stores (in the baking aisle).  The only thing to watch for is if the recipe calls for gluten-free vanilla, make sure your vanilla extract is gluten free.  &lt;span style="font-weight: bold;"&gt;MCKORMICKS and KIRKLAND&lt;/span&gt; brand are gluten free for sure.&lt;br /&gt;&lt;br /&gt;The cookies taste good but they end up being very crispy...not the chewy, soft homemade cookies you're expecting.
